This is vegan-minimalist-Indian mainly.
I'd have to forgo some of my more complex favorites, like idli, dosa, pakoras, dishes that require a grinder or more complex spices like tamarind paste, sambar powder or garam masala that I currently use routinely.
Equipment
- Cutting board and knife
- One medium saucepan with lid
- One griddle or frying pan, medium or large
- One large and one small mixing bowl
- One spatula
- One ladle
- One rolling pin
- Two plates, two spoons, two forks, two microwaveable glasses or mugs
- Half dozen tupperware containers, assorted sizes
Pantry
- Bulk rice
- Bulk ground whole wheat
- Bulk lentils (probably toor dal, pigeonpeas)
- Bulk chick peas
- Salt, sugar, coffee
- Canola oil
- Turmeric, red pepper powder, cumin, corriander powder
- Soy sauce
Freezer
- Large bulk bags of french-cut green beans, spinach and peas
Routine Shopping List
- Onions, potatoes, green chillies, bananas, tomatoes, cucumbers
- Soy milk and firm tofu
- Whatever fresh veggies are available and suitable for either Indian pan-frying or Chinese/Thai style stir-frying
- Seasonal fresh fruit
- Small quantities of bulk nuts, unroasted
Routine Recipes
- Rice
- Dal
- Roti
- Fried veggies, Indian style
- Chinese or Thai style tofu stir fry
- Salads
- Flat bread sandwiches/wraps
- Soggy potato chips/french fries
